Processing Method: Washed - first fermentation of the cherries for 30 hours in drums. De-pulped. Subsequently, a second fermentation once the pulp has been removed, also for 30 to 32 hours in drums. Then dry slowly in the marquesina (like a small green house with the plastic canopy) for 26 to 38 days. 

Roast Profile: Espresso

Notes: strawberry, caramel, red apple

Expect sweetness to grow as this coffee ages, we recommend 10-14 days post roast for the optimal brewing window.
