Cassiopeia is a specialty coffee roastery based in the Blue Mountains, NSW. Cassiopeia was established in 2006 and we now have three espresso bars and a dedicated Roastery.

We pride ourselves on sourcing, roasting and serving the best quality coffee available. Our coffee offerings change throughout the year as our focus is to continue to bring fresh crop coffees to our customers and, where we can, deal directly with the farmers.

We choose to lightly roast our coffees so you can better experience the hard work of producers and appreciate what we love about coffee.

THE TEAM

zac Suito - Founder

At age 18, Zac founded Cassiopeia Specialty Coffee Roasters and since 2006 has experienced enormous growth with Cassiopeia which now encompasses three espresso bars, a roastery and warehouse, as well as a pivotal blue mountains coffee culture through it’s wholesale arm.

Bridging the gap between farmer, buyer, roaster and consumer, Zac travels to origin 6 months of every year for cupping and on the ground experience, but also to help create and implement processing systems to empower farmers and their communities, and grow the overall quality of the product. Zac’s vision is for his bars to be a meeting place, a ‘neighbourhood coffee joint’, where you can get excellent coffee, that you know is harvested, produced, roasted and made with love and care. 

Tom Bamford- Head Roaster

Tom is our Head Roaster and a familiar face at after opening our Windsor bar in 2017. With a decade of experience behind the bar and a passion for industry growth, the transition into his current role was nothing short of inevitable. Tom has been a fundamental asset, guiding Cassiopeia into a bright new future, with a focus on growth and not only the quality of the coffee we serve, but also the way in which we connect with the community. His dedication to excellence, quality and development is what drives tom to ensure every roast is a step forward. 

Courtney Hall - Operations Manager

Courtney is our head of operations as well as a gun barista at our Katoomba bar. Growth, development and implementing new frameworks for our business to thrive are Courtney’s passions. With a grassroots approach, her skills as a warm and charismatic barista have translated to her approach with our wholesale clients and staff. 

While Zac is running the big picture operations, Courtney is making sure everyone gets their orders on time, and lets be honest, there’s nothing more important than that. Her passion and determination to grow Cassiopeia as part of our core team makes Courtney an incredible asset to our expanding business. She also makes a hectic latte, she’s not all business.
